| Manufacture and Freezing |
 Our foods are manufactured and frozen within two hours to ensure no bacteriological changes or deterioration takes place. Once frozen, the products are transferred immediately to our cold storage where temperatures are maintained at -20°C.
Freezing is accomplished by placing the cooked product in specially designed trays which are then stacked in a compartment and sealed. The product is then brought into contact with chilled metal plates and maintained until the temperature reaches -40°C.
 This method of freezing ensures a uniform rate of chilling across the product and hence textural consistency is maintained. In addition, the core of the product is frozen to the same degree as the surface, thereby eliminating any bacterial activity from within. This method also avoids the necessity of cold air circulating around the product and thus eliminates the risk of dehydration.
